Grip's Cake of The Month 

 

We sell a cake recipe book in the cafe...here is one of our favourites from it (and it's really easy to make!)

 

Banana Bread

You Need: A 2lb Loaf Tin, Baking Paper                               

Ingredients
75g (3 oz) Butter
150g (6 oz) Caster Sugar
3 Ripe Bananas
2 Eggs
225g (8 oz) Self Raising Flour
A quarter of a teaspoon of Bicarbonate of Soda
Pinch of Salt

Method
1.Line the tin with baking paper, leaving two of the opposing edges poking over the sides as it helps to lift the bread out when cooked. Put the oven on to 160 C

 

 

                                                                      

 

 

 

                                                                               
2.Cream together the caster sugar and butter (if you have an electric hand held blender, all the mixing can be done with it)
3.Whisk the eggs and mix into the butter and sugar
4.Mash bananas with a potato masher or with an electric blender and mix into the egg and butter mixture.
5.Sieve the flour, bicarbonate of soda and salt into the mixture and fold in

 

                        
6.Pour into the loaf tin, leaving at least half on inch from the top as the loaf rises quite a lot and call spill over if it’s too full.
7.Bake at 160 C for between an hour and an hour and a quarter. It is done when a knife or skewer comes out of the loaf clean.
